Squid (a friend) told me about the tomato sandwiches she makes for her family in the summer. I am currently scarfing down my second meal of tomato sandwichs.
My take on it:
Italian slipper bread, sliced
thickly sliced tomato
pesto (in a jar from Trader Joes)
mayo
salt and pepper
combine into open faced sandwich
SO very good
